A Birthday, a Cake Mix, and a Bag of Crab Legs

Several years ago, my niece was spending the summer with us and it was her birthday. The problem was that Mike was in seminary and we had NO money, not even money for extra food. We were living on hot dogs, macaroni and cheese, and eggs for dinner. I really wanted her birthday to be special, but so far--nothing. I woke her up that morning and told her that I wanted to bless her for her birthday but had no money to buy anything for her, even food for a special dinner.

"But God has lots of money," I told her "And He can give us a special birthday dinner."  Katie Beth nodded her head--even at the age of two she trusted the Lord. The three of us prayed together.

Later that day, we went to a food pantry (a ministry similar to Harvest International) where we paid two dollars for two bags of food. That was the only day ever (it never happened before or afterward) that they had cake mixes there. I chose a cake mix (her favorite flavor) from the "pick one" table and then a frosting can from another "pick two tables". God was soooooooooooo good!!!!!!!

St. Valentines Day

The stores are filled with hearts, chocolate, and roses in every shade of pink and red imaginable. As a lover of pink, chocolate and roses, this just may be my favorite time of year to shop!  It's St. Valentines Day! Yes, St. Valentine's Day--I know that sounds a little odd to your ears. When I was a little girl, that's what we called it. But in recent years, as all holidays are secularized and materialized more and more, St. Valentine's Day became Valentine's Day.

Who was St. Valentine and why do we celebrate love on the day we've set aside to remember him?  Valentine was a priest who lived in Rome during the reign of Emporer Claudius. He was know for his kindness and selfless love. He was arrested for his faith and imprisoned, but managed to send and receive letters from his friends and fellow Christians. Emporer Claudius tried to convert him to Roman paganism to spare his life, but Valentine shared the Gospel with the emporer instead. Before he was martyred for his faith in Jesus, he healed the eyes of his jailor's blind daughter.

In the Late Middle Ages, when courtly love and romance became the rage throughout Europe, St. Valentine's Day became associated with love and romance. Both romantic love and Christian martyrdom are things to celebrate.  St. Valentine stands in the "great cloud of witnesses," in Hebrews 12, cheering us on! St. Valentine's Day can be celebrated in either direction, or both directions. We can celebrate the romantic love we share with our sweethearts or we can remember those who have given their lives for the Gospel of Christ.

If we are celebrating St. Valentine's Day with our sweetie, there are many options.  He, of course, can buy us a dozen long-stemmed roses and a big box of Godiva chocolate.  We can go out to a lovely dinner and gaze into each other's eyes.  But, of course, those things cost money.  So, what are some inexpensive ways to celebrate the romance you share with your husband?  Here are some things Mike and I have done:
  • Pack china, crystal goblets, a tasty lunch, and sparkling grape juice. Go on a picnic in a pretty spot.  Bring a beautiful comforter to sit on and be careful with the china and crystal!
  • Buy a package of Valentines for children.  Write little notes to your husband on each one and hide them throughout the house.  Make most easy to find, but hide some so that they won't be found until later
  • Make a CD of romantic songs and dance outside on the patio in the moonlight
  • Make a scrapbook of your relationship from its conception until now. Look at it together.
  • Tell your children how you met, how your husband proposed, and other fun stories. Your children will love this!
  • Wait until the children are in bed and have a romantic dinner by candlelight ALONE!
  • Read old love letters out loud to each other!

Christmas Recipe: Candy Cane Cookies

_  Candy Cane Cookies

This is a yummy cookie recipe that looks so pretty on a plate of cookies. I love to serve this at Christmas teas.

1 ¼  Cup Sugar
1 Cup Butter
1 egg
½ Cup Milk
1 tsp Vanilla
1 tsp Peppermint Extract
3 ½ Cup Flour
1 tsp Baking Powder
¼ tsp Salt
½ tsp Red Food Color (plus more to the color you desire)

Cream together sugar and butter.  Add egg, then milk, vanilla, and peppermint extract.  Stir in flour, baking powder and salt.  Divide dough in half.
Stir food color into one half.  Cover and refrigerate at least 4 hours.   Preheat oven to  375 º F.  For each candy cane, shape one rounded tsp dough from each half into 4-inch rope by rolling back and forth on clean surface. (Don’t use flour or it won’t stick to the other half)  Place one red and white rope side by side; press together lightly and twist.
Place on prepared cookie sheet; curve top of cookie down to form handle of cane.  Bake 9 to 12 minutes or until set and very light brown.  Remove from cookie sheet to wire rack and cool completely.

Christmas Traditions: The Traveling Dinner

12/12/2011

"We just travel somewhere on Christmas Eve. I roast a turkey or chicken. We eat finger foods...." My new friend, Laura paused for a breath.

"What a beautiful way to remember Christmas Eve with Mary and Joseph traveling so far. I love your family tradition." I clasped my hands together joyfully. In my imagination our whole family was traveling to Bethlehem...on donkeys!

"Well, you could join us this year," Laura invited. "We could meet..."

I rushed home to tell the family about our brand new Christmas tradition.

I even looked in the Yellow Pages for donkey rentals. This was the year of our Lord Two Thousand and people still used land lines and the
Yellow Pages.

"Go to the beach on Christmas Eve? Isn't that a strange way to celebrate Christmas Eve?" Julianna replied when I asked her what I thought of the Nolette family's invitation.

Simplify for Christmas

There are so many ways to simplify the holidays to not only cut cost, but to decrease stress.

When I host my annual Christmas party this year, I will have all the guests bring a dish to share. This will cut my expenses and make it easier to prepare for the event.

When the extended family starts talking about Christmas, I will suggest that we draw names and only give that person 1 gift that has a price limit on it. This will instantly chop down the amount of shopping I have to do.

Jolly Happy Homeschool Christmas III

It's Christmas time in our home school! Today, we'll finish up our journey through the Curtis home to experience Christmas with us.

I love my family, especially at Christmas. I began homeschooling in 1991 because I wanted to spend more time with my delightful children. Now, almost twenty years later, I am experiencing such good fruit from my homeschooling. My home is filled with children who love one another and love spending time together. And, they love hanging out with Mom and Dad. My children dress modestly for Christmas parties, like wholesome movies, and know the words to all the verses to every Christmas carol. We love to do our traditional Christmas devotions and sing Christmas carols.

Jolly Happy Homeschool Christmas II

It's Christmas time in our home school! Let me continue our tour of the Curtis home.

In the dining room is something that is an embarrassment to some of my dear friends. What is it you ask? Well, so glad you are interested. I have a pink Barbie Christmas tree surrounded by Barbies who are Christmas caroling. In fact, last year, I have a singing Barbie Christmas tree. But, this year I have added to the pink tree and caroling barbies, a house, sports car (for heading to Grandma's house), nutcracker, and sleigh. Every room in the house is decorated with barbies baking or celebrating Christmas. Yes, it's true! This whole area is slathered in pink twinkle lights.

Our Christmas tree is always real, smelling of luscious pine. Though the needles get everywhere and make my husband sneeze, he still gets a tall fresh tree every year. I look forward to unwrapping the gifts that are piling up under the tree, anticipating the faces that will be delighted to open each present with his/her name on it.

My house just looks like Christmas! And it smells like Christmas too. Shine and Kate make lots of cookies. Aisha is always whipping up a treat or two. Julianna and I made Cinnamon ornaments last year to delight and tickle the nose with their fragrance.

More than Tastes & Smells

Jolly Happy Homeschool Christmas I

It’s Christmas time in our home school! We have pulled out all the boxes of decorations. Let the Christmas decorating begin. Pictures come off the walls and knick-knacks come off the shelves to be replaced by Christmas wreaths, stuffed bears, and all kinds of "Christmasy" decor. We love Christmas in our house.

There is a transformation that takes place on Brightview Drive where we live. A Christmas village comes to lives with villagers, fruit stands, and carolers by an iron lamp post. My favorite is the ice cream shoppe that lights up. You can see the ice cream man dipping a cone for the pretty girl at the counter. There are little bridges and churches. In another place, snow men line up to dance the night away. They sway and smile and fill the table tops with blue and white crispness. When I gaze over at snowman land, I pretend that I am living in a snowy place, rather than sunny Florida.

'Tis the Season to be Generous II

11/29/2011

The greatest thing we can to do honor the Lord is to imitate Him. We imitate him by giving our time, treasures, money, and energy. Christmas is a time to give so that others will be blessed. Giving our money to charities or spending our money to buy gifts for the ones we love begins in our hearts.

Generous hearts lead to generous pocketbooks. And the gifts that flow from hearts of love are the very best gifts! As we grow in our relationship with the Lord, we become more like Him. Just as He began the first Christmas with giving, so we celebrate every Christmas in our life with a generous heart.

But I guess I am preaching to the choir! You already want to be generous, but, like me, you don't always feel like giving. Or maybe you are bombarded with so many requests to give, that you simply don't know where to begin. Here are some steps to take to give generously with wisdom.

Cultivate a Generous Heart

Stock Up for Thanksgiving & Christmas

"Butterball turkeys are on sale," a voice said from behind the newspaper.

"Already?" I asked, surprised.

"Mom, it's already November," my financially astute daughter with a degree in  accounting, responded.

Oh, dear friends, here it is already November. It is time to buy, buy, buy, shop, shop, shop. Or is it? If you are like me, this holiday season finds my wallet with a lot less money inside it this year. I am having to modify my spending, which means that I will have to modify my celebrating.

Am I worried?

Panicked?

Sad?

No, I am not. I am totally trusting God to make this the best celebration ever--just less expensive.

Stock Up Now!

Making Christmas Stars

10/26/2011

"Can I start decorating my house for Christmas yet?" Brock asked.

'No, it's only July," Jenny Rose admonished him.

He continued to ask month after month, so I wasn't surprised when he invited us over last week for hot chocolate, Christmas treats, a Christmas movie, and ornament making.
Picture
We made these lovely stars out of construction paper, card stock, or scrapbooking paper.

I made the mistake of thinking that the stars were made out of one piece of paper so I brought 12" x 12" scrapbooking paper in different colors. Turns out that you use 6 pieces of paper, so I ended up with a HUGE star of mismatched colors. I will have to make more--more smaller stars.

But, I have to tell you, making the large ornament got me in the mood for Christmas. I don't know if it was the movie or the fellowship or the craft. But, it was such a lovely, relaxing evening.

Welcome to My World

10/16/2011

Picture
One of my favorite stories about Jesus takes places after He is baptized by John the Baptist.

Two of John's disciples show interest in Jesus and ask Him where He is staying. Jesus invites them to come and see.

The three men spend the day together and when the day is over, Andrew says to his brother, Peter, "I have found the Messiah. You have to come and meet Him." Well, Andrew says something like that.

Picture
Jesus' heart was: Welcome to my world! He opened His heart to those who wanted to know Him.

I want to imitate that day in this blog. I want to invite you to come home with me and see where I live. Meet my family, meet my friends, meet my precious Savior, Jesus.

So, welcome to my world! Sometimes, my world is a gentle, peaceful place of pink roses, white picket fences, and cheerful smiles. Sometimes, it is a rough-and-tumble place of conflict, mess, and confusion. Most of the time, it is both. My life is filled with sticky kisses, mistakes, successes, good books, walks around the block with people I love, and new lessons learned all the time.

Here is my new blog and website. Make yourself at home here. Take a look around and get to know me. I hope to get to know you too. Hope that this is the start, or rekindling, of a beautiful friendship.

Recepcion a mi mundo!
With love & affection,
Merey
